Philosophy
Since acquiring Château Saint-Jean d'Aumières , Paul Tori's goal has been to uncover the potential of each terroir and plot in the vineyard. The geology is indeed a mosaic of clay and limestone, and the vines are just as diverse. It is then important to understand the behaviour of each plot of the vineyard and vinify them individually. This is the key to making a delicate blend and achieving a broad range of highly qualitative wines.

To understand the results and potential of each individual vineyard plot, it is important to vinify it separately. This strategy gives essential knowledge while enabling us to have a wider array of glavors upon whih to build highly distinctive wines.


The aging process is meant to enhance the characteristics of each vineyard and varietal in order to allow richer combinations during the final blends. The idea is not to apply ready made recipes, but to listen to the grapes and handcraft the wines. This process is a play of natural evolution in which the wine maker participates in harmony. This rigorous approach has led to superior results with the 2001 vintage and bright prospects for the future. The cultural mix that characterizes Paul Tori and his family is truly reflected in this search for an authentic taste rather than to settle for the stereotype of international flavours.

Technique
The winery has been fully upgraded in order to adopt full destemming of the harvest with the exception of those grapes vinified under carbonic maceration. The winery's capacity stands at 4,000 hectoliters with full temperature control, crucial during fermentation and maceration. You can find further information in "Our Wines".

Our wines are aged for up to 18 months. There are two rackings during the ageing process before wines undergo traditional fining. Upon his arrival at the winery, Paul Tori introduced barrels into the ageing process, which has given an added dimension to the wines' complexity and elegance.

Château Saint-Jean d'Aumieres wines are bottled in Bordeaux Privilege bottles without filtration for the reds. Finally, and in order to maximize quality control from the vine to the bottle, we have invested in a new state-of-the-art bottling line.
